Bonfire Toffee

This toffee is a bonfire essential. You can't watch fireworks without some of this - it's the Mean Mother law.

300g Demerara sugar
100g butter
2 level tablespoons golden syrup
2 level tablespoons black treacle
4 tablespoons water
1 teaspoon white vinegar

Put all the ingredients in a heavy based pan, heat slowly, stirring whilst the butter and sugar dissolves. Bring to the boil, cover pan and boil for 2 minutes. Now uncover the pan and boil until the mixture reaches 149ºC/290F. If you don't have a thermometer, boil for 12-15 minutes. Pour the toffee into a buttered tray and leave to completely cool. Turn out onto a board and brake up.
