Garden Bounty Quinoa Salad or a wild rice salad, or a simple green salad - the possibilities are endless! You can add which ever herbs you fancy, they really add to the dish. And of course, you can try which ever fish you fancy!
2 fillets of salmon
1 lemon, cut into two slices - the rest for squeezing
a bunch of herbs, I've used golden marjoram, thyme and parsley
glug extra virgin olive oil
salt and pepper
HOW TO MAKE:
Place a large piece of tin foil on a baking tray. Add two slices of lemon and then place your chosen fish on top. Glug your oil over and add the herbs, and seasoning. Close the tin foil to make a little parcel.
Now bake in a moderate oven for 15 minutes. Serve with your chosen side dish!
